The Montesol Experimental, in the heart of Ibiza Town, dates back to 1933 and claims to be the oldest hotel on the island. Now in the hands of uber-cool cocktail connoisseurs turned hotel and restaurant outfit, The Experimental Group, the hotel's eye-catching exterior makes something of a statement on the main square of Vara de Rey. Still a place to be seen - Orson Welles once stayed here - the hotel manages to retain its nods to the past, while being hip and on-trend - hence the Sabbaba Montesol restaurant, which blends cuisine from Jerusalem and Spain. There's also a terrific rooftop cocktail bar, with views of the citadel.

The rooftop bar offers some sensational views of the town, but also a range of wild cocktails - try the Sabbaba Finish, a blend of Jerez and cherries. The pork tomahawk with fennel, charred leek cream and ham is lovely, or for something different, try oysters with arak, grapefruit and mint.

Sabbaba Bar & Restaurant: contemporary, influences from Spain and Jerusalem. Dishes include octopus with yoghurt and cherrychurri and skirt steak with confit potatoes. Open daily for breakfast, dinner and cocktails. Mains from €11.
